The juice for our Rosé comes from the red grapes picked throughout the harvest. As the red grapes are sorted and filled into tanks, a small amount of juice is carefully drawn off and put into well experienced French oak barrels. The juice is inoculated with a variety of yeast strains, fermented, and then aged on the yeast lees to develop a soft mouthfeel. The juice ferments slowly at low temperatures to retain all of the fresh fruit and aromatics that come from the grapes to produce our delicate, fruity and enjoyable Rosé. The wine does not undergo malolactic fermentation and retains the crispness and fresh acidity important to Rosé.
